Clearly, the first thing to do before starting any fitness and nutrition challenge, is to set up your blog. WordPress appears to have changed slightly since the last time I used it, so please be patient with us during this on-ramping period as we figure this thing out. Also, I would like to note that the featured image is NOT a vegan cheesecake. This is a peppermint chocolate cheesecake that had more dairy in it than I have ever seen in a cheesecake. This cheesecake was meant to be a precursor to the 28 vegan cheesecakes (aside: Yes, we truly had (and have) an elaborate plan to eat 28 vegan cheesecakes. Not necessarily in one sitting, however. We have even created detailed shopping lists. Our only barrier has been time, because baking 28 vegan cheesecakes is not a weekend project.), but when we made it, my oven began to smoke horrendously, and we had to finish baking it at my neighbor’s house.
For the record, it was delicious.
